Moroccan Pastilla Shines in Washington: Chef Ilham Achmakou Wins 3rd Place at DC Embassy Chef Challenge

Moroccan cuisine once again claimed the spotlight on the international stage during the 2025 DC Embassy Chef Challenge, held in the US capital. Representing the Moroccan Embassy in Washington, Chef Ilham Achmakou secured a remarkable third place with her delicious chicken pastilla.
The expertly presented pastilla impressed a panel of culinary journalists and chefs with its harmonious flavors and refined aesthetics. Chef Achmakou expressed her pride in representing Morocco’s culinary heritage, stating that Moroccan food is “not just a flavor – it’s a cultural identity”.
This annual event highlights the concept of culinary diplomacy, offering embassies a unique platform to showcase their national cuisine. Morocco’s continued participation – following previous showings by chefs Moha Fedal and Fayçal Zahraoui – affirms its growing global culinary presence.
